deb barshafsky on food, libation, and life
I love to eat. And food is one of my favorite topics of discourse. While I enjoy chatting about Annie Proulx’ novels, the nesting habits of North American birds, and James Bond movies, I relish (my verb betrays me) talking and writing about food. Sushi, chili dogs, Kalamata olives, the perfect guacamole, Underwood deviled ham, exotic cheese, marzipan, Southern barbeque, reed thin fresh asparagus - I rhapsodize about it all. My fork. My pen. My passion.

I met someone from Chicago last weekend. Two things: I’ve never been to Chicago, and I love hot dogs. So I more or less invited myself to the Windy City for a Chicago-dog tour. She smiled and lowered her voice, “I still know where to get a foie gras dog.”Foie gras is illegal in Chicago. There’s also talk of banning trans fats. It’s now apparent that vegemite has been banned, bringing an unforeseen street cred to the humble Vegemite sandwich. What’s next for the seedy underbelly of gastronomy? Black-market partially hydrogenated soybean oil?
But I’d eat a transfat-vegemite-fioe-gras-hotdog if I thought I was getting away with something.

There are few things more depressing to me than crappy fruit. Rock-hard nectarines, mealy peaches, sour plums–I long ago gave up trying to get my stone fruit fix in any supermarket. Michigan yields great peaches and that’s usually where my dad and I buy our bushels in the summer. San Francisco has hooked me up with some great fruit, but I have been paying dearly for it. (Granted, it’s not dosed with high-intensity pesticides like the fruit I buy in Michigan, but it still ain’t cheap.)

Kate Hill’s French Kitchen Adventures
Pig, Duck, Beef, Armagnac… the end of the work ‘Week in Gascony’ leads to Saturday’s market and later that evening to an FCI/all cooks/all out jammin’ in the French Kitchen. So in anticipation and to give ourselves a respite from the competition style eating we’ve been doing, I plan a day of leisurely swilling and sipping chez two friends of mine, 2 Sisters in Aquitaine.

Strange Sandwiches, a typical post discusses adventures in old cookbook reading.
Some of the sandwich filling ideas are new to me. Here’s a sampling:Bacon-celery: chopped bacon, chopped celery, and mayonnaise.
Baked beans and raisins: baked beans, raisins, horseradish, Worcestershire sauce, minced green pepper, minced onion, and mayonnaise. Hmmm….
Minced carrot spread: carrots, green peppers, celery, nuts, mayonnaise
Fruit spread: mashed cooked prunes, nuts, and cheddar or cottage cheese
Ham and peanut butter: ground ham, peanut butter, Worcestershire sauce, salad dressing, and mustard
The blog also features lots of recipes.

traveling and writing about food
A guy at a table next to me in a restaurant ate his lunch with great gusto, got the check, stuck a credit card in the folder and handed it to the waitress, saying he was going out to feed the meter and would be right back to sign it. And of course that was the last we saw of him. Considering there are more banks than restaurants in this town anymore, it’s gotta be easy to take out and then cancel all the cards you can eat.

Cunningham splits from French Laundry
From the San Francisco Chronicle
Director of operations Laura Cunningham is leaving the French Laundry (6640 Washington St., Yountville) and all of Thomas Keller’s restaurants. Cunningham has been with the French Laundry, and with Keller as a life partner, for around 10 years, and has been instrumental in developing a new style of service — at once relaxed, yet very professional — that has gained national attention.

Making sense of the Michelin stars
By now most people know that Michelin released its San Francisco guide yesterday, and only one Bay Area restaurant, the French Laundry, earned a three-star rating.
That was about the only thing that wasn’t a surprise in the guide; the seminal Chez Panisse, a restaurant that revolutionized American cooking and is still at the top of its game, earned one star.
